Acacia honey is distinctive among honey varieties for its clarity and its restraint. Made from the nectar of Robinia Pseudoacacia trees, it is pale — almost water-white — with a mild, clean sweetness that does not overpower whatever it is paired with. The single ingredient is acacia honey (100%), with nothing added or removed. It is certified kosher under the KLBD and holds Soil Association organic certification, with full traceability back to source. At 340g in a squeezy bottle, it is a practical size for both the Rosh Hashanah table and everyday kitchen use throughout the year.
Serve it in a honey dish alongside apple slices for the traditional Rosh Hashanah dip, drizzle it over honey cake, or use it as the base for a Yom Tov glaze on roasted carrots or chicken. It keeps at room temperature and, unlike many honeys, is slow to crystallise due to its high fructose content — if crystallisation does occur, simply stand the bottle in warm water.
